Beef stew

The real Arlesian-style beef stew recipe ! A good winter recipe, a comforting sauce dish made from beef, pork, black olives and white wine.

Ingredients for 6 people
  • 1 kg Beef (cottage, cheek, galinette)
  • 200 g Pork breast
  • 3 Onions
  • 2 Tbsp Flour
  • 0.5 liters of dry white wine
  • 2 Garlic cloves
  • 1 Bouquet Garni
  • 4 Tomatoes
  • 3 tablespoons pitted black olives
Process

Cut meat into pieces.

Cut the bacon into small pieces
Peel and chop the onions
In the pot with the hot olive oil, brown the lardons and onions
Remove the lardons and onions from the casserole, add the meat and brown it Sprinkle with flour, stir, add the onions in the pot
Sprinkle with flour, stir, add in the bacon and onions in the casserole with the hot olive oil, brown the bacon and onions and deglaze with the white wine
Add the garlic, the bouquet of onions and salt and pepper
Cover and let it cook on low heat for 2 to 3 hours
Add the tomato and cook for another 30 minutes Add the olives at the end of cooking
