The ratatouille

Real ratatouille recipe cooked by local people ! It is a Provençal specialty made in the summer, from vegetables from the sun, ideal to accompany your grills !

Ratatouille is a traditional culinary specialty of Nice, Provencal, Occitan and Mediterranean cuisine, based on stew stewed with Mediterranean vegetables and olive oil.

Ingredients for 4 people :

- 1 onion
- 4 zucchini
- 1 eggplant
- 1 red or green pepper
- 2 tomatoes
- 1 clove of garlic
- Thyme
- Olive oil

Preparation :

- In a casserole sauté the onion minced in olive oil.
- Remove the onions and fry the zucchini, cut into cubes.
- Remove the zucchini and fry the eggplant cut into cubes.
- Remove the eggplant and fry the pepper, diced.
- Pour all the vegetables into the casserole and add the tomatoes cut into small pieces.
- Add the garlic clove cut into 4, salt, pepper and thyme, stir the whole.
- Simmer covered for 10-15 minutes.

Serve with meat or rice.
