Tapenade is an iconic recipe of Provence, made from black or green olives with olive oil, capers, anchovy fillets and garlic.
It can be enjoyed as a dip, especially as an aperitif or simply as a spread on bread or by dipping vegetable sticks. But it can also be used as a stuffing for poultry.
Ingredients for black tapenade:
- 300 g pitted black olives
- 15 fillets of anchovies in oil
- 60 g capers
- 3 cloves of garlic
- Pepper
Ingredients for green tapenade :
- 300 g green olives pitted
- 60 g capers
- 3 cloves garlic
- 30 g pine nuts
- 12 cl olive oil
- Basil leaves
Preparation :
- Put all ingredients except olive oil in the bowl of the blender. Puree, then gradually add olive oil, as for mayonnaise, to obtain a homogeneous dough.
